Quinoa is the new kid of super foods. It is has nutritional value because of its high proein and fibre content.In addition to tasting good, it is gluten-free, wheat-free, and nutrient-packed.
The majority supply of quinoa comes from Peru and Bolivia. It can be purchased in a natural state or ready to use packaging.
Quinoa can be eaten for breakfast, as a main salad dish or used as a side plate to replace heavy starches such as potatoes, rice and pasta.
Mediterranean Quinoa Salad (5 Servings)
2 cups quinoa, (dry measure)
4 cups water
3 medium bell pepper, red, yellow or orange, one of each color! chopped into small peices
30 cherry tomato, chopped in 1/2
1/2 medium onion, raw, red, chopped fine
1 cup slice s cucumber, raw, cut slices into 4′s
1/2 cup crumbled feta cheese, cow or goat milk
2 tbsp olive oil
3 tbsp lemon juice
Cook quinoa according to directions of bag. Chop all veggies into small bite size pieces. Crumble feta cheese. Mix cooked quinoa, veggies, cheese, oil, and lemon juice all together in a large bowl .
