Traditional Passover Recipes

Potato Kugel

Ingredients: 6 potatoes, 3 eggs, 1/2 cup matzo meal, 1/2 tsp. potato starch, 11/2 tsp. salt and pepper,1 grated onion.

Method of cooking:  Grate potatoes into cold water and drain. Beat eggs until thick. Into a large bowl mix all the ingredients. Put into a 1 1/2 quart casserole and bake at 350 degrees for 1 hour. Makes 6 to 8 servings.

Apple kugel

Ingredients:  3 eggs, 1 cup sugar, 3/4 cup oil, the juice and rind of 1 lemon, 2 cups matzo meal, 2 tbsp. potato starch, 5 apples pared and  diced, 1/4 tsp. ginger, 1/2 cup chopped nuts, 1/4 tsp. cinnamon

Method: Combine eggs with sugar and beat well. Add oil and beat again. blend in the remaining ingredients. Place the combined ingredients into a greased casserole pan and bake at 350 degrees for 45 minutes or untill brown. Makes 6 to 8 servings.
